Previously with the Ritz-Carlton resorts, Chef Maddock has perfected a Progressive American Cuisine and uses only market fresh ingredients. Chef Maddock?s menu highlights favorites such as pear salad, honey-soy glazed halibut, braised beef short ribs, and pan-seared sea scallops. The menu showcases succulent broiler selections of corn-fed beef from the Midwest, and a variety of Arnie's favorite comfort foods from traditional meatloaf and beef stroganoff to chicken pot pie.
